About the model

Climate chamber for controlled maturation, drying and storage of dry-cured meat products.

Air distribution inside the chamber

Airflow systems

DAF and CrossFlow allow air distribution to change during maturation and drying in the KMD chamber. The choice depends on the product and required drying intensity.

DAF 1

The air supply direction alternates: vertically along the walls and horizontally above the trolleys. Air is extracted through ducts above the trolleys. The diagram shows distribution changing between the left and right sides in both phases.

DAF 1 — vertical and horizontal phases, with 30/70, 50/50 and 70/30 percent air distribution

DAF 2

Vertical and horizontal air supply alternate. Unlike DAF 1, air extraction also changes: through ducts above the trolleys or along the walls. The diagram shows both phases and changing air distribution.

DAF 2 — two airflow phases with changing air supply and extraction, and 30/70, 50/50 and 70/30 percent distribution

CrossFlow

In the first phase, air flows downwards through the products and is extracted through side ducts. In the second phase, the direction reverses: air is supplied from below and extracted above the trolleys. The diagram shows air distribution changing between the left and right sides.

The diagrams explain different airflow systems. The system is selected according to the process and chamber layout; not all systems shown are included together.
